Granny Smith apples — cored and cut into matchsticks |

fennel bulb — stalks and fronds removed, thinly sliced |

fresh lemon juice |

carrots — shredded |

red and/or green cabbage — finely shredded |

red onion — thinly sliced |

Dressing |

mayonnaise |

apple cider vinegar |

Directions
In a large bowl, combine apples and fennel with lemon juice. Add carrots, cabbage and red onion. In a medium bowl, whisk together dressing ingredients and season with salt and pepper as desired. Add dressing to slaw mixture and gently toss to combine. Refrigerate until ready to serve.
