Apple Fennel Slaw with Creamy Gorgonzola Dressing

Ingredients

 

Slaw

2  Granny Smith apples — cored and cut into matchsticks
3 cups fennel bulb — stalks and fronds removed, thinly sliced
2 Tbsp. fresh lemon juice
1/2 cup carrots — shredded
3 cups red and/or green cabbage — finely shredded
1 cup red onion — thinly sliced
 

Dressing

2/3 cup mayonnaise
2 Tbsp. apple cider vinegar
2 Tbsp. sugar
2 Tbsp. fresh lemon juice
4 oz. crumbled Gorgonzola cheese
  salt and pepper for seasoning

Directions

In a large bowl, combine apples and fennel with lemon juice. Add carrots, cabbage and red onion. In a medium bowl, whisk together dressing ingredients and season with salt and pepper as desired. Add dressing to slaw mixture and gently toss to combine. Refrigerate until ready to serve.
