Granola Squares with Ginger Peach Filling

ripe, fresh, local peaches — washed, pitted and diced (about 4 cups) |

Directions
Preheat oven to 375˚F. In a large bowl, combine granola, 1/4 cup flour and sea salt. In another bowl, whisk together egg whites, maple syrup and oil until foamy, about 1 minute; pour over granola mixture and stir to coat. Line a 9x13-inch baking dish with aluminum foil, making sure that about an inch of extra foil wraps over the edges of the sides of the pan; coat foil with cooking spray. Place 3/4 of granola mixture in baking dish and press to form base of bars. Bake for 15 minutes and remove from oven. Meanwhile, place peaches, cinnamon, ginger and sugar in a small pot over medium-high heat. Cook for about 12 minutes, stirring, until tender; remove from heat and stir in 2 tablespoons of remaining flour.
Spread cooked peach mixture overtop of baked granola bar base. Add almonds to bowl with remaining granola mixture and toss together; spread evenly overtop of cooked ginger peach layer. Bake for an additional 20-22 minutes until golden brown. Remove from oven and cool. Once cooled, grip foil securely and lift baked granola slab out of pan. Cut into 24 bars.
