You can’t go wrong serving holiday guests a classic quiche, and of course we have them, ready to heat and eat in our Prepared Foods Department — a super easy answer to the holiday brunch party.

But, if you have a hankering to make your own, Chef Crystal has offered up a quiche formula of sorts that allows you to bake up an egg-cellent version every time.

Holiday Quiche

Compliments of Chef Crystal Baldwin

Quiche Pie Crust
Serves: 8 (1 9" Crust)
Prep Time: 1-1/2 hrs. (Includes chilling time)
Cook Time: 45 min.


1-1/4 cups all-purpose flour
8 Tbsp. unsalted butter, cut into small pieces and chilled
1/4 tsp. salt
5 Tbsp. ice cold water

Directions:

  1. In a bowl, combine flour with salt. Rub butter into the flour until mixture resembles coarse meal.
  2. Drizzle water over the flour and stir gently just until combined.
  3. Flatten dough into a disk, wrap in plastic and refrigerate 1 hour.
  4. Preheat oven to 400°F.
  5. On a floured work surface, roll dough into a 12-inch round and transfer to a deep-dish pie pan.
  6. Prebake crust for 10-15 minutes with pie weights. Lower heat to 350°F.
  7. Fill crust with custard (recipe below) and preferred ingredients.
  8. Bake for an additional 30 minutes until golden brown on top and toothpick comes out clean when inserted.
  9. Cool 20-30 minutes before slicing.

Quiche Custard

Serves: 8
Prep Time 10 min

Ingredients:

2 eggs
1 egg yolk
1-1/4 cups heavy cream
1/4 tsp. fresh thyme, chopped
Pinch nutmeg
1/2 tsp. salt
1/4 tsp. fresh-ground pepper

Directions:

  1. Place all ingredients in a blender.
  2. Blend until very smooth.
  3. Add your chosen ingredients.
  4. Then pour into a prebaked crust.
