Market District Certified Angus Beef — Thrill to Grill!

Portabella Swiss Burger

Portabella Swiss Burger

Ingredients

  • 3 portabella mushrooms, cleaned and stemmed
  • 3 Tbsp. Market District olive oil
  • Coarse kosher salt and freshly cracked pepper to taste
  • ¼ cup mayonnaise
  • 1 tsp. hot sauce
  • 2 lbs. Market District Certified Angus Beef ground chuck (80% lean)
  • 6 slices Swiss cheese
  • 6 burger buns
  • 6 leaves green leaf lettuce

Directions

  1. Brush both sides of portabella caps with olive oil, season with salt and pepper and grill approximately 5 minutes per side. Slice into strips and set aside.
  2. In a small mixing bowl, stir together mayonnaise and hot sauce; set aside.
  3. Portion ground chuck into 6 patties, season with salt and pepper and grill until internal temperature reaches 160°F (approximately 5 minutes each side). Top each patty with a slice of cheese.
  4. To assemble, spread bun bottom with spicy mayo, top with lettuce, burger with cheese and mushroom slices.

  • Serves: 6
  • Prep Time: 14 hrs. (includes marinating time)

Bloody Mary London Broil

Ingredients

  • 2 cups tomato juice
  • 2 Tbsp. Worcestershire sauce
  • 1 Tbsp. prepared horseradish
  • 1 Tbsp. hot sauce (Frank’s® RedHot or TABASCO®)
  • ½ tsp. celery salt
  • 1 (2 to 2-½ lb.) Certified Angus Beef top round roast (London broil)
  • 1 Tbsp. canola or vegetable oil
  • 1 tsp. black pepper
  • 2 Tbsp. chopped flat leaf Italian parsley

Directions

  1. Combine tomato juice, Worcestershire, horseradish, hot sauce and celery salt. Reserve one cup and marinate roast in refrigerator with the remainder overnight, or two days for bolder flavor.
  2. Preheat broiler to high heat. Remove roast from marinade, discarding excess marinade and pat dry. Rub with oil and season with pepper. Place on broiler pan and broil 15 minutes. Flip and roast an additional 15-20 minutes to desired doneness. Allow to rest 10 minutes on cutting board tented with foil. London broil is ideal at medium rare to medium doneness (135°-145°F final temperature after resting)*.
  3. In a small saucepan heat reserved sauce over low heat, simmering 5 minutes to thicken.
  4. Slice roast very thin against the grain; serve with warm sauce and garnish with parsley. 
  5. *For food safety, cook to a minimum internal temperature of 145°F.
