Smoky Chipotle Pasta Salad

  1. Boil the pasta until al dente; drain and allow to cool.
  2. For the dressing, whisk together all of the dressing ingredients until they are well combined.
  3. In a large bowl, combine the rest of the ingredients except the scallions and Cotija cheese; toss with the dressing.
  4. Garnish with scallions and shredded Cotija cheese.
