Apricot Habanero Glazed Baby Back Ribs

Preheat the oven to 350°F. For the ribs, combine all dry spices together to form a rub. Rub the spice mix on both sides of the ribs, then place the ribs into a roasting pan. Pour the water into the roasting pan and seal tightly with foil. Roast the ribs for 1½ hours, or until tender when poked with a fork but not falling off the bone.
While the ribs are roasting, make the sauce by combining the apricot preserves, rice wine vinegar, habanero, and salt in a blender. Blend for 1-2 minutes, or until a thick glaze is formed.
To finish the ribs, preheat the broiler on the oven. Remove the foil cover from the ribs and drain any excess liquid. Brush the glaze on the bottom of the ribs, then turn the ribs and brush on the tops. Place ribs under the broiler until the glaze is bubbly and begins to caramelize. Remove from the oven, sprinkle with scallions, slice, and enjoy!
