Beyond Meat Tostadas

Preheat oven to 350°F. Chop the chipotle peppers and combine with a little of the sauce from the can; this should measure about 2 tablespoons total, set aside. Cut the lime into wedges. Peel and dice the avocados. Shred the lettuce. Pick leaves of the cilantro for garnish.
Brush the tortillas with 1 teaspoon olive oil and place on a rack on a sheet pan in oven. Toast until light brown and crispy, 5-10 minutes. Remove from oven and set aside.
While the tortillas are toasting, heat a medium frying pan over medium-high heat. Once hot, add 1 teaspoon of olive oil and the Beyond Meat. Cook, breaking up until cooked through and crumbly.* Add the chipotles, black pepper, and salt. Stir to combine.
Heat the black beans in a small pot or in the microwave. Place 2 tortillas each on 4 plates. Top the tortillas with the Beyond Meat, then the black beans, lettuce, salsa, avocado and cilantro. Serve with the lime wedges.
*For food safety, cook Beyond Meat Grounds to an internal temperature of 165°F.
