Big Game Day Chili

Heat the oil in a large, heavy pot over medium-high heat. Once hot, add the beef and cook, breaking up the beef until cooked through, about 5 minutes.* Stir in cumin, chipotle powder, and chili powder and cook another minute. Add the salsa, canned beans with brine, and tomato paste. Crush the tortilla chips up a little and add to the pot, stir well. Bring to a boil, reduce heat to low, cover, and simmer for 1 hour or more, until flavors are well blended. Adjust seasoning with salt, if necessary.
While the chili is simmering, peel and dice the red onion, cut the limes into wedges, and chop the cilantro. Garnish chili with Cheddar, cilantro, diced red onions, and lime wedges.
*For food safety, cook ground beef to an internal temperature of 160°F.
