Bourbon Chicken with Creamed Corn

Directions:

Place corn in colander and rinse under warm water for one minute. Rub chicken with marinade seasoning on all sides.

On the stove, heat a grill pan or skillet on high heat with olive oil. Once heated, place the chicken in the pan. Cook for 6 minutes on each side or until chicken is fully cooked.*

While the chicken is cooking, place the heavy cream and minced garlic in a sauce pan. Bring to a boil (this should take 2-3 minutes). Stir in the corn, salt, and pepper. Simmer for 5 minutes on medium heat. Stir in Parmesan cheese, most of the green onions (reserving about a quarter for garnish), and bacon bits. Cook for an additional minute.

Serve the chicken with the creamed corn and garnish with remaining green onions.

*For food safety, cook chicken to an internal temperature of 165°F.
