Bruleed Persimmons with Blue Cheese and Balsamic Vinegar

Preheat oven to broil. Line a baking pan with aluminum foil. Place persimmons on pan, skin side down, in a single layer and brush lightly with oil. Season with salt as desired and top each with about 1 tablespoon of cheese. Lightly sprinkle tops evenly with bread crumbs.
Place under broiler for 3-5 minutes until browned and bubbly. Remove from heat and cool slightly.
Drizzle with balsamic vinegar and garnish with fresh herbs; serve warm. Makes 6 servings based on 2 persimmon halves per portion.
