Chanukah Chicken Schnitzel

Preheat oven to 400ºF.
In a small bowl, combine panko, za’atar seasoning, sesame seeds, ½ teaspoon salt and ¼ teaspoon pepper.
Pat chicken dry, brush with mayonnaise and season with remaining ½ teaspoon salt and ¼ teaspoon pepper.
Dredge 4 breast halves into panko mixture, then whipped eggs, then again in panko.
Heat 1 tablespoon of oil in large sauté pan on medium-high heat. Add the 4 coated chicken pieces to the pan and lightly brown on each side for 3 minutes. Place on a spray-coated cookie sheet.
Repeat procedure with the 4 remaining chicken halves.
Bake at 400ºF for 10 minutes or until internal temperature reaches 165ºF.
Serve with lemon slices and enjoy!
