Chicken Piccata

Directions:

Chop the parsley. Trim the tough stems from the bottom of the asparagus but leave rubber banded together in their bunches. Juice one lemon and cut the other into 4 wedges. Combine the flour and grated cheese in a medium bowl. Split the chicken breasts in half lengthwise. Place chicken breasts between two sheets of plastic wrap or in a large Ziploc bag and pound evenly until approximately ¼-inch thick. Once flattened, season both sides with ½ teaspoon of salt and ¼ teaspoon of black pepper.

Fill a deep stock pot with salted water and heat over high heat. Once boiling, add linguine. Cook until al dente, about 7-9 minutes. Add the asparagus to the pot for the last 2 minutes. Remove the asparagus with a pair of tongs and set aside. Drain the pasta, return to pot and toss with 1 tablespoon of olive oil then set aside.

Meanwhile, heat the remaining olive oil in a large skillet over medium-high heat. Take each seasoned chicken breast and dredge into the flour mixture, taking care to shake off excess. Once oil is hot, transfer the dredged chicken to skillet and cook until golden-brown, approximately 3-5 minutes per side*. Set aside.

Sprinkle 2 teaspoons of the remaining flour mixture into the pan, stirring to combine with the leftover oil. Add the chicken stock and stir well. Reduce the chicken stock until there is about ¼ cup remaining. Add the lemon juice and the capers. Reduce heat to medium-low and add the butter a little at a time, whisking constantly. Once butter is added, remove from the heat and add the chopped parsley.

To serve, plate chicken over the linguine noodles and asparagus, and drizzle sauce over and around on the plate. Garnish with lemon wedges.

*For food safety, cook chicken to internal temperature of 165°F.
