Classic American Pot Roast

Cook Time: 5-6 hours

Directions:

Season roast with kosher salt and pepper.

Heat a large pan over medium-high heat and add olive oil. Sear roast on all sides until well browned, then transfer to slow cooker.

In the same pan, briefly sauté minced garlic for 1-2 minutes, then deglaze with the red wine.

Reduce the red wine to ½ of original volume, then add to the slow cooker.

Add potatoes, onions, carrots and broth to slow cooker and cook on high for 4-5 hours or until tender.

In the last hour of cooking, whisk cornstarch into water in a small bowl. Add to slow cooker and stir to mix thoroughly.

When ready to serve, add fresh herbs and butter and stir to mix.

Portion the pot roast into serving bowls and garnish with additional minced herbs if desired. Enjoy!
