Ultimate Gameday Nachos

Heat a large sauté pan over medium heat and add olive oil. Once oil is simmering, add pineapple and sear for 5 minutes, only stirring minimally until the pineapple is charred on the outside.

Add onions, ground beef and bacon and continue to sear all ingredients until the meats are fully cooked and beef reaches an internal temperature of at least 160°F as measured by a probe thermometer.

Drain the pan of fat, then add the enchilada sauce and soy sauce. Reduce the sauce until it is fully absorbed into the meats.

Preheat the oven to 350°F. To assemble nachos, mix lime juice and lime zest with sour cream.

In a separate bowl, mix tomatoes, avocado, vinegar and olive oil. Season with salt and pepper to taste.

Mix nacho cheese and ranch flavored tortillas chips and place onto an oven-safe platter or casserole dish.

Spoon the seared meat blend over top, then sprinkle with the four-cheese blend. Place the dish into the oven for 5 minutes, or until the cheese is fully melted.

Sprinkle the tomato salad over top, then drizzle with the lime sour cream.

Lastly, garnish with chopped cilantro and enjoy!
