  1. In bowl, combine chicken, soy sauce, sherry, egg white and cornstarch. Set aside and marinate for 10 minutes.
  2. In wok or large frying pan, heat half of oil over medium-high heat. Cook chicken, stirring, for 5 minutes. Transfer to a plate.
  3. Add remaining oil. Add scallions and broccoli; cook, stirring, until vegetables are tender-crisp, about 5 minutes.
  4. Stir in chicken and its juice with cooking sauce. Cook, stirring, until heated through and thickened, about 2 minutes.

Serve with basmati rice or warm naan.
