Good Gourmet White Cheddar & Swiss Macaroni

Cook pasta according to package directions; drain in colander and set aside. 

Heat milk in a small pot over medium heat until steaming; reduce heat to low to keep warm. 

In a large pot, melt butter over medium heat. Add shallots and cook for about 5 minutes; stir in flour and cook for about 2 minutes. Gradually whisk in heated milk; cook for about 5 minutes, stirring occasionally, until thickened. Remove from heat and stir in cheeses, spices and seasonings. Fold in cooked pasta. 

Preheat broiler. Coat a 9x13-inch baking pan with cooking spray. Transfer macaroni and cheese to prepared pan and sprinkle with bread crumbs. Place under broiler for 1-2 minutes until golden. Makes 8 servings based on 1-cup portions.
