Grilled Watermelon Salad

Directions:
Preheat grill or grill pan. Once hot, place slices of watermelon on grill. Grill for 2-3 minutes on each side, or until grill marks are visible. Remove watermelon from grill. Cover and chill for a half hour. Cut watermelon into 1-inch squares and place in a large serving bowl. Evenly sprinkle with feta, fresh mint and balsamic vinegar. Season with cracked black pepper to taste.
