Hoosier Burger with Bacon-Onion Jam

Makes: Bacon-Onion Jam, 2 Cups
Prep Time: Hoosier Burger, 15 minutes; Bacon-Onion Jam, 15 minutes
Cook Time: Hoosier Burger, 10 minutes; Bacon-Onion Jam, 25 minutes
Burger Directions
Preheat a cast iron skillet over medium heat.
Form the ground beef into 6-ounce burger patties.
Season each side of the burger with salt and pepper.
Place the burger on the cast iron skillet and cook for 3 minutes before turning.
Cook for an additional 3 minutes, or until internal temperature reaches 155˚F. Top each burger with a slice of cheese.
Remove from heat and layer the toppings and the burger on the toasted bun.
Finally, apply a hearty amount of bacon-onion jam over top the burger.
Bacon-Onion Jam Directions
In a medium saucepan, cook the diced bacon over medium heat until most of the fat is rendered.
Add in the onions and cook for 2-3 minutes, stirring often.
Reduce heat to low, add in the remainder of the ingredients and continue to cook for 7-8 minutes until mixture resembles a jam-like consistency.
Remove from the stove and allow to cool for an hour. Place into a container, cover and place into the refrigerator.
