Jicama Salad with Strawberry Lime Vinaigrette

Combine sugar, water and pectin in a small bowl. Whisk until dissolved. Place mixture in a blender, along with lime juice, vinegar and berries. Blend until smooth. Transfer to a container and stir in basil; season with salt and pepper. Refrigerate until ready to use.
Combine salad ingredients in a large bowl; drizzle 1 cup dressing over top just before serving (or serve on the side), reserving remaining dressing for another use. Makes 10 servings based on about 1 cup salad per portion.
