Mahi Mahi Fish Tacos

In a medium bowl, mix vegetable oil, lime juice, chili powder, garlic, cilantro, salt and pepper. Add fish strips to bowl and toss gently. Cover and marinate fish in refrigerator for 20-30 minutes. While marinating, preheat outdoor grill or grill pan and arrange vegetable toppings on a platter or large plate. Remove fish from refrigerator. Place fish strips on grill and discard remaining marinade. Cook for 5-8 minutes, turning once, until fish reaches an internal temperature of 145° Fahrenheit. Using clean tongs, remove fish from grill and place alongside toppings. Warm tortillas in microwave for 20-30 seconds, or in a skillet. Top with grilled fish, vegetables and your favorite hot sauce.
Chef's Tip: Serve with avocado-ranch dressing and salsa verde. Or, top your favorite greens with grilled fish, vegetables and garnishes and avocado-ranch dressing, and serve the tortilla on the side.
