Marmalade Glazed Ham

Preheat oven to 325°F. Place ham, cut side down, in a large baking pan with a 2-inch side. Add a cup of water and cover with aluminum foil before placing in oven. Cook the ham for 20 minutes per pound. Every 30 minutes, baste the ham with the liquid in the bottom of the pan.
For glaze, combine marmalade, red wine vinegar, the zest of one orange and one grapefruit in a small sauce pan. Combine and bring to a simmer for 3-4 minutes, then set aside.
For relish, remove skin, pith and membranes from both oranges and grapefruits, releasing citrus segments over a bowl so that you get all the juice as well. Remove leaves from the mint and finely chop. Thinly slice the onion. Combine the citrus with the red onion, mint, olive oil, and a pinch of salt and pepper.
Once the ham is cooked, remove from the oven and turn up heat to 450°F. Remove foil and spoon the glaze over ham, making sure it gets in the nooks and crannies. Return to oven uncovered and cook for 10 more minutes or until the ham forms a nice crust.
Slice ham and serve with citrus relish. The leftovers make great sandwiches and can be a fun addition to mac and cheese.
