Mixed Greens with Warm Pecan-Crusted Purple Haze, Beets, Citrus & Shaved Fennel

Preheat oven to 350°F. Roll cheese into balls (about 1½ teaspoons each) and roll in pecans to coat; place in single layer on rimmed baking pan. Bake 5 minutes or just until heated through.
Segment orange and grapefruit by slicing off top and bottom ends to make 2 flat surfaces. Place fruit, cut side down, on cutting board; with small paring knife, slice down sides following the natural curve to completely remove skin and white pith. Holding fruit over small bowl, cut on both sides of the membranes to release each segment.
Divide greens onto 4 salad plates; top with beets, shallot, fennel, pecan-crusted cheese and citrus segments. Serve with vinaigrette.
