Allow guests to build their own taco bags, crushing chips if desired.
Place chicken, 1 cup salsa, spices and water in large skillet. Heat over medium, stirring often, for about 5 minutes until heated through.
Turn chip bags sideways and cut about 1-inch off of side of bag. To build tacos, place about ⅓ cup chicken mixture and 1 tablespoon each of salsa, cheese, crème fraîche and avocado into each bag. Top each with a sprinkle of chives and a few drops of hot sauce. Squeeze a lime wedge over top just before eating.
