Prime Rib Roast

Cook Time: 2 hrs.
Combine olive oil, garlic, herbs, salt, and pepper in a small bowl. Rub this all over the prime rib. (If you have time, do this the day before, then refrigerate.)
Preheat oven to 450°F degrees. Place the roast in a roasting pan.
Cook the roast for 15 minutes at 450°F then reduce the temperature to 325°F. Continue to cook until your meat thermometer reads 135°F. Then, reduce the oven temperature to 135°F. Set a timer for 40 minutes. When the timer goes off, remove the roast from the oven.*
Serve with your favorite vegetables.
*For food safety, cook beef to an internal temperature of 135°F, and hold for 40 minutes.
