Roasted Baby Beets with Bacon and Blue Cheese

Directions:
Preheat oven to 425°F. Trim greens from beets, leaving about a 1-inch top on each; rinse and gently scrub (no peeling needed). Halve beets, place on a roasting pan and toss with oil, salt and thyme. Cover with foil and roast for 25 minutes. Remove foil and roast for another 25 minutes, or until tender.
Meanwhile, cook bacon according to package directions. Let drain on a paper towel-lined plate and chop when cool enough to handle.
Arrange beets on serving platter and drizzle with vinegar. Garnish with bacon, blue cheese and additional thyme, if desired. Serve warm or chilled. Makes 6 servings based on 1/2 cup per portion.
*One pound of regular beets can be substituted in this recipe; just peel, chunk and roast.
