Roasted Brussels Sprouts with Blue Cheese, Caramelized Onions & Cranberries

Cook Time: 25 min.
Preheat oven to 375°F.
To caramelize onions, melt butter in a large skillet over medium heat. Add onions and toss to coat with butter. Cover and slowly cook, stirring occasionally, for 10 minutes or until golden. Turn heat up to medium high and brown onions, stirring constantly about 10 more minutes. Set aside.
Toss Brussels sprouts with olive oil, salt & pepper.
Place Brussels sprouts on a foil-lined baking sheet and roast for 25 minutes.
Remove Brussels sprouts from oven once they are lightly charred and roasted.
Place Brussels sprouts in a large bowl and toss with caramelized onions, dried cranberries and blue cheese.
