Shepherd’s Pie

Directions:

Preheat the oven to 400°F. Dice peel and dice the onion, celery, and carrots. Chop the garlic. Peel the potatoes and cut into 1-inch pieces. In a small bowl, separate the egg yolk from the white.

Place the potatoes in a medium saucepan, cover with cold water and bring to a boil. Once boiling, reduce heat to maintain a simmer and cook until tender and easily crushed, about 10 to 15 minutes. Place the cream and butter into a microwave-safe container and heat in the microwave until warmed through, about 35 seconds. Drain the potatoes in a colander and then return to the saucepan. Mash the potatoes and add the cream, butter, Dijon mustard, and 1 teaspoon of salt; continue to mash until smooth. Stir in the egg yolk until well combined. Reserve the egg white for another recipe.

While the potatoes are cooking, prepare the filling. Heat a large frying pan over medium-high heat. Once hot, add 2 teaspoons of olive oil and the beef. Cook, stirring to break up the beef, until cooked through, about 3 minutes, then add the onion and cook until they begin to take on color, approximately 3 to 4 minutes.* Add the garlic, carrots, and celery and cook another minute. Sprinkle the meat with the flour and toss to coat, cook for another minute. Add the tomato paste, beef stock, and Worcestershire and stir. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly. Season with ½ teaspoon of salt and the ground black pepper.

Add the peas to the beef mixture and spread evenly into an 11x7-inch baking dish. Top with the mashed potatoes, starting around the edges and creating a seal to prevent the mixture from bubbling up; smooth with a rubber spatula. Place on a parchment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or until the potatoes begin to brown. Remove to a cooling rack for at least 15 minutes before serving.

*For food safety, cook ground beef to internal temperature of 160°F.
