Set slow cooker to low. Add ingredients to pot and mix well. Cover and cook for 4-5 hours until vegetables are tender.

Chef's Tip: Top with sour cream or plain Greek yogurt, shredded Cheddar cheese, chopped scallions or cilantro, hot sauce, crushed tortilla chips and∕or salsa.
