White Gazpacho with Grapes and Almonds

Chill Time: 1 hour
Preheat oven to 350°F. Place almonds on a baking pan and toast in oven for 10 minutes until golden brown; set aside.
Blend garlic, 2 cups grapes, cucumber, grape juice, vinegar, oil, salt and pepper in a blender until smooth. Transfer to a medium bowl and chill for at least 1 hour. Quarter remaining grapes and chill until ready to serve.
Serve soup garnished with grapes, almonds, chives, a drizzle of oil and a dollop crème fraîche as desired. Makes 6 servings based on ⅔ cup per portion.
